Where it earns its place
Reading a probe in a slab at floor level while crouching over the meter is awkward and slow. Reading one in a subfloor void, a wall cavity or a ceiling space without it is close to impossible. Three feet is not much but it is the difference between seeing the display and guessing.

Which sensors does it work with?
Both — the RH/T-S1 ambient sensor and the RH/T-S3 in-situ sensor. It is the lead between sensor and meter, not a sensor itself.
Why would I need an extension?
So the sensor can sit inside a slab hole, a wall cavity or a duct while you read the display comfortably. Without it you are reading a screen at floor level, which on a full survey is the difference between a comfortable job and a sore back.
Does the cable affect accuracy?
No. It carries the sensor signal to the meter; the measurement is made at the sensor.
